Braised Chicken
Braised Rabbit
Braised Chicken or Rabbit

This is an easy recipe that will work with both skinless and skin-on chicken pieces. It is also a delicious way to cook rabbit.

3-4 lbs chicken or rabbit pieces
1/2 cup flour
1 1/2 tsp fresh thyme leaves, crumbled (or 3/4 tsp dried)
1 tsp salt
1/2 tsp onion powder
1/2 tsp celery seed
1/8 tsp pepper
Olive oil, vegetable oil, or bacon fat
1 cup water or chicken stock

Put flour and spices in a paper or plastic bag. Add chicken or rabbit pieces and toss to coat well with flour mixture. Heat oil or bacon fat in large skillet. Add chicken or rabbit, turning to brown on all sides.

Add water or chicken stock. Cover and simmer until meat is tender, one to two hours depending on size of pieces and age of animal.
