Vegetable Soup
Novara's Great Vegetable Soup

A delicious summertime soup.

1/4 pound bacon, chopped
1/3 cup olive oil
1 tbs butter
1 large onion, thinly sliced
1 large carrot, 1/4 inch dice
1 large rib celery, 1/4 inch dice
2 medium zucchini, diced
1 cup shredded red cabbage
1/2 tsp salt
1/3 cup chopped tomatoes with juice
Freshly ground pepper
2 cups beef broth
1 can (19 oz) cannellini beans, rinsed & drained
Grated Parmesan cheese

In a small saucepan, simmer bacon in water to cover, 5 minutes; drain. Heat, oil, butter, and bacon in large saucepan or Dutch oven. Saute onion, stirring occasionally, until deeply golden.

Add carrot, celery, zucchini, and cabbage. Cook and stir for two minutes, then add tomatoes, salt, and a few twists of pepper. Add the broth and enough water to cover the vegetables by one inch. Cover, lower heat, and simmer at least two hours.

Add cannellini beans for the last 15 minutes of cooking. The soup should be rather thick. Add additional salt and pepper to taste. Ladle into soup bowls and top with grated parmesan cheese.
