Pink Salad
Pink Salad

You can substitute plain yogurt for some or all of the mayonnaise.

Vegetables:
2 cups grated cooked beets
2 cups grated cabbage
2 cups grated peeled apples
1 grated carrot

Dressing:
3/4 cup mayonnaise
1 tsp cinnamon
1 tbs apple cider vinegar
1 tsp honey
1/4 tsp salt

Mix all of the dressing ingredients together. Combine beets, cabbage, apples, and carrot in a bowl. Add the dressing and watch the salad turn a delightful shade of fuschia. Adjust dressing ingredients to taste.

If desired, sprinkle finished salad with a topping such as dried cranberries, sunflower seeds, pea shoots, or toasted nuts.
